Hi lazy bakers! life has been beyond crazy but I’m excited to tell you that I was really inspired this weekend when my mom asked me to make vegetables for dinner. So I went straight to Sprouts (my new favorite place) and picked up everything that I liked. (Including things I don’t need... whoops!)


Fall/winter is coming/here and soup is everywhere. So while I was shopping I felt that I wanted some hearty. Potato and carrot. Carbs, carbs and more carbs.

so let’s get to it!

here’s what you need.

1 bunch of asparagus

1 yellow onion

1 bag of fingerling potatos -you can also use purple potatos for color

1 pack of mushrooms

6 whole carrots

** lazy way -> use baby carrots

salt to taste (I use kosher salt. Table salt is ok)

assortment of seasoning

( I used, basil, thyme, parsley, kosher salt, extra virgin olive oil, oregano and fennel)

fresh garlic

**lazy way -> using pre-minced garlic in a jar.

- for extra flavor I topped with some garlic butter. Roughly 2 tablespoons



here’s what you need to do.

wash all vegetable, trim peel and cut as needed.


cut 1 large sheet of foil

cut the whole carrots down to 2” or 3 ” chunks. ( if using baby carrots- wash and add to foil.

top woth oil and add all seasonings.

mix together so that all vegetables are coated. Top with butter- optional.

bring longest edges of foil together. roll then down to crate a small dome with thr vegetables.

roll in short edges of foil so seal in the “bag” you just created.

warm BBQ to 600 degrees +

put on top rack cook for 30-40 minutes rotating the bag, from top to bottom every 10-15 minutes.


** NOTE- you can cook this in an oven; if doing so you can put them in a baking dish or place all of the vegetables on a cookie sheet or 9x13 baking dish. set oven to broil high set on top rack or second rack from broiled- cook till crispy. About 20 minutes


when done open foil bag and serve- this works great



final result.


this meal works great as a BBQ side or as a whole meal In itself. very tasy dinner for the person who doesn’t eat meat anymore lol.
